It’s our favorite time of year! We love fresh strawberries, and the best way to taste them all year round? Freeze them up in some yummy jam! Even if you have no experience canning or freezing foods to preserve them, this is FOOL-PROOF! It’s literally so easy.
The only thing you need is a bucket of fresh strawberries, a couple of packs of SureJell, sugar, and some containers to store them in. I follow the instructions in the SureJell packs which call for 2 cups of crushed strawberries with 4 cups of sugar per one packet of Surejell.
To begin, I always wash my strawberries 3 times, and the cut the stems off. Then I pulse them in a blender (you can skip this step and mash them with a potato masher instead; the consistency is up to you!).
Once I get the desired consistency, I put two cups of the strawberry puree in a bowl and add 4 cups of sugar to that. I let it sit for about 10 minutes. In the meantime, I bring 3/4 cup water to a bowl and add the package of SureJell. I let it boil for one minute and then remove it from heat. I add it to the sugared strawberries and then stir well. Once it’s all blended, I start adding the mixture to jars. The jars don’t have to seal – they just need a good, tight lid. Once I’ve filled all of my jars, I let them sit on my counter for 1-2 hours, then put them in the freezer. This jam can stay in your freezer for a year, and in your fridge for up to 3 weeks.
Pro tip: use different size jars. We usually gift some of our jams, and the small sizes make great gifts!
